Rainy, snowy, basically bad weather.
I had an okay day today. I got up rather early but promptly fell asleep on my couch. I even dozed through the news that I got up to watch. It was around 11 when I roused myself. Sigh.
I got to work on tonight's dinner. I cooked 2 chicken breasts with veggies in my slow cooker. I didn't do any fancy sauce or anything today, just the veggies and the chicken. While I was preparing the veggies and chicken I watched a few episodes of Friends. I love that show. Who knew?
In the afternoon I got the idea that my chicken might end up being dry, so I looked on the internet for a good recipe for a sauce. I found one on Epicurious.com that I decided to try because I had the ingredients and it was easy. It was very simple. The recipe called for salt, but many commentors said that salt wasn't needed, so I omitted it. I mixed 1/2 cup of mayonaise with 1/2 of 1/3 of a cup of dijon mustard. Then I added a tablespoon of honey. The only honey I had in the apartment was honey for tea, so I used that! Mix well, and serve with chicken, or what have you. It's a cold sauce, but the meat when we ate it was hot, so it warmed up. It was a lovely light tangy honey-mustard sauce. I've got some leftover for lunch tomorrow. Let's see how it is on my omelette.
A bit after 5 I got a call from my hubby saying that he'd be late tonight. Poor guy. While he was away, I got things ready for dinner. I set up the coffee pot, set the table and turned the slow cooker down to warm.
I watched a bit of TV and finally he came home around 8:30. Hubby was very tired and I really felt for him. He changed out of his work clothes and then we ate dinner. It was very good, and the sauce was appreciated by both of us! I think that recipe is a keeper. Now to get more dijon!
Fumihiko did the dishes tonight and then we went out. First we went to my school to set the timer on the heater. I'm glad we did that as it was only 10 degrees in my school. That would take a long time to get up to a decent temperature.
We made a quick stop at the grocery store on the way back home. We're going to cook at home tomorrow night too, but it'll be more like cooking for ourselves. We're having yakiniku.
At home again we had a quiet evening. We watched Desperate Housewives, which was fun. Fumihiko went to bed early for him, and I should get to bed soon. It's terribly late again.
